100g Pancake Mix (1/2 cup) milk of choice 3 large egg 1 Tbs butter or oil of choice
Directions Using a whisk, thoroughly combine all the ingredients in a bowl. Grease fry pan with oil/butter. Heat until almost smoking to seal the pan and prevent sticking. Once hot, turn to low heat and wait for 30 seconds Spoon batter into the fry pan on a low heat, forming 3 pancakes approx. 10cm in diameter. Cook for 45-60 seconds or until you see bubbles. Carefully flip each pancake and cook the other side for a further 45 seconds or until golden. Serve with your favourite topping and devour.
